Model catalog

Superseded by models.md, which folds the catalog into a database-driven model configuration: the catalog loaded on first launch, models chained with fallbacks, settings per model, and tracking the latest version without breaking. What this document decided that still holds -- models.dev as the source, prices dropped, snapshots kept -- is carried there.
